The Tourniers have worked their Bandol hillsides for six generations — by hand, by horse, biodynamically. In Penedès, Josep Mitjans works alongside his wife and son to ferment wine in beeswax-lined clay amphorae and ages his sparkling wine in a Spanish Civil War-era bunker. Wineries like these are often too small for the US distribution machine; and their wine is too important to lower quality.
